Ingredients

For the salad:
-1 bunch of kale
-1 sweet potato
-1 red onion
-1 apple
- feta or parmesan
- 1/4 cup pumpkin seeds

For the dressing:
¼ cup extra-virgin olive oil
¼ cup tahini
2 to 3 tablespoons lemon juice, to taste
2 teaspoons Dijon mustard
2 teaspoons maple syrup or honey
½ teaspoon fine sea salt
Freshly ground black pepper, to taste
2 tablespoons ice-cold water, more as needed

1. De-stem, chop and massage kale

2. Cut sweet potato into small cubes, toss with salt, pepper, cinnamon, paprika and garlic

3. Roast sweet potatoes in 200 degree oven for about 30 minutes

4. Toss pumpkin seeds in a table spoon of honey or maple syrup, salt, and cinnamon

5. Roast pumpkin seeds in 200 degree oven for 5-10 minutes (keep an eye on these, they cook and burn quick!)

6. Dice up red onion and apple.

7. Whisk together all salad dressing ingredients

8. combine it all in a bowl

9. top with feta or parmesan
